PREPARATION

PLACE EGGS IN LARGE POT OF COLD WATER .THEN HEAT TO BOILING, WHEN WATER BOILS REDUCE HEAT AND SIMMER 10 MINUTES .DRAIN AND RUN EGGS UNDER COLD WATER TILL EGGS ARE COOLED

HEAT BUTTER IN LARGE SKILLET (WORKING IN BATCHES ) FRY HAM TILL BROWN ON BOTH SIDES 3 OR 4 MINUTES REMOVE FROM HEAT . PUT ON PAPER TOWEL TO DRAIN THEN CHOP FINELY .PEEL AND CUT EGGS IN HALVE REMOVE YOLKS AND PLACE IN BOWL WITH MAYONNAISE , RELISH ,SALT AND PEPPER ,MASH YOLKS STIR IN ABOUT THREE QUARTERS OF THE HAM ,PUT MIXTURE IN THE WHITES OF THE EGGS GARNISH WITH REST OF THE HAM PIECES OR PIECES OF LETTUCE OR SLICES OF TOMATOES THAT HAVE BEEN CHOPPED
